What is Sukiyaki?

Sukiyaki is a sweet-savory Japanese hot pot made with thin slices of beef, tofu, mushrooms, and vegetables simmered in a light soy-based broth. It’s typically served family-style and dipped in raw egg — but don’t worry, you can skip the egg if your diet is Egg-Free (like me).

Ingredients

  • 8 oz (225g) thinly sliced beef (ribeye or sirloin works best)

  • 1/2 block firm tofu, cut into cubes

  • 1 cup Napa cabbage, chopped

  • 1 cup shiitake mushrooms, sliced

  • 1/2 cup enoki mushrooms (optional)

  • 1 medium onion, thinly sliced

  • 1 cup shirataki noodles (optional, konnyaku noodles)

  • 2 green onions, sliced

  • 2 large eggs (optional, for dipping)

  • Sukiyaki Sauce (Warishita):
  • 1/2 cup soy sauce

  • 1/2 cup mirin (sweet rice wine)

  • 1/4 cup sake

  • 3 tbsp sugar

  • 1/2 cup dashi stock or water

Directions

  • Prepare the sauce: In a bowl, whisk together soy sauce, mirin, sake, sugar, and dashi (or water) until sugar dissolves.
  • Heat the pot: Place a shallow, wide pot or skillet over medium heat. Add a little oil or beef fat and quickly sear a few slices of beef until lightly browned. Push beef to the side.
  • Add veggies & tofu: Layer the cabbage, mushrooms, onion, tofu, shirataki noodles, and green onions neatly in the pot.
  • Pour the sauce: Pour the sukiyaki sauce over everything and bring it to a gentle simmer. Let it cook uncovered for 5-7 minutes until vegetables soften and flavors meld.
  • Serve: Traditionally, each person dips the hot beef and veggies into a raw beaten egg before eating. This adds richness and cools the food slightly. (If you’re not comfortable with raw egg, skip this step or use a cooked egg dip.)
  • Enjoy! Eat right from the pot with rice on the side, refilling the pot with more ingredients and sauce as you go.

Notes

  • Use thinly sliced beef to ensure it cooks quickly and stays tender.
    Feel free to swap or add other veggies or whatever you have in the fridge!
    Serve with steamed rice or noodles for a complete meal.
    If you don’t have dashi stock, water works fine, but dashi adds authentic umami flavor.
